Norwegian Recipes to Try This Week!

Lefse

Ingredients
2.5 pounds of Russet potatoes, peeled
1 stick room temperature salted butter, chopped
½ cup heavy cream
1 teaspoon salt
1 cup all-purpose flour
Steps
Peel potatoes and simmer in a large pot of water for around 45 minutes or until tender.
Strain potatoes and rice.
Place butter at the bottom of the bowl and add the rice potatoes for a second time into it.
Combine and mix together. Make sure butter has been fully incorporated into potatoes, but try to keep them as light and fluffy as possible.
Let the container sit on the counter at room temperature for an hour and then place into the fridge overnight.
The next day, take out potatoes and in a large bowl, mix potato & butter mixture, cream, flour, salt. Use your hands and mix right in the bowl. You should end up with a dough that is somewhat similar to a bread flour consistency, but a bit more crumbly.
Divide the dough by eight. Roll each of these ⅛ dough portions into a ball. Place all on a plate and put in the refrigerator
Preheat lefse grill to 260°C
Add flour to both your rolling mat cloth and also to the rolling pin cloth. Massage the flour in and be liberal with the flour.
Take one of the lefse balls out of the fridge and with your hands, gently form it into a disk. Place down on a rolling mat and using the rolling pin, roll out the ball to be as flat as possible.
Once the lefse is as flat as possible, use the turning stick and gently slide it underneath the center of the rolled-out disk. You should be able to get all the way under without tearing the dough.
Lift the rolled-out dough (that has the stick mid-way through) and drape it onto the edge of the preheated 500 F lefse grill. You should be able to gently lay the first half of the disk onto the grill and then by turning (or rolling) the lefse stick, fold the other half onto the grill. Start a timer.
When your timer hits 1 minute and 30 seconds, let the timer keep going and use your turning stick to flip the lefse.
Once your timer hits 3 minutes, remove the lefse from the grill and put on a large plate.
Repeat the process and allow all lefse to cool for an hour.
Top with whatever toppings you want to use and roll up.

Medisterkaker

Ingredients
2 ¼ ground pork
3 tablespoons salt
5 tablespoons potato starch flour
¾ teaspoon black pepper
½ teaspoon nutmeg
¼ teaspoon ginger
2 ½ cups milk
Steps
Mix the meat with salt until sticky.
Add flour and spices. Add milk, a little at a time.
Be sure the meat gets sticky between each time you add milk.
The resulting blend should not be too firm. Make balls the size of a small fist.
Fry in a hot frying pan, when they are chestnut brown put them in simmering water or broth.
Takes about ten minutes to get finished.
Surkål

Ingredients (4 to 6 servings)
1 medium (750 g) head of cabbage
2 green apples, cored, peeled and grated
1 teaspoon salt
1 tablespoon caraway seeds
3 tablespoons white vinegar, divided
1 cup (240 ml) stock
2 tablespoons granulated sugar
Steps
Using a mandolin or knife, grate the head of cabbage very thinly.
Place the shredded cabbage, grated apples, salt, caraway seeds, 2 tablespoons vinegar and stock in a large pot.
Bring to a gentle simmer, cover with a lid and cook for 45 minutes, stirring occasionally.
After 45 minutes, stir in the sugar and the remaining 1 tablespoon of vinegar. Season to taste.
Remove from the heat and let sit for about 5 minutes to let the flavors come together.
Beer Soup Recipe

Ingredients
1 pint of Pilsner or light ale.
2 cups of water
1/4 cup heavy cream
2 large eggs
1 tbsp. Sugar
Steps
In a large saucepan, combine beer, water, cream, eggs, and sugar.
Place over low heat and whisk until mixture is light and frothy.
Remove from heat before the mixture boils.
Salmon With Dill Sauce

Ingredients
4 Norwegian salmon fillets
3/4 cup plain yogurt
1 clove garlic (minced)
4 tbsp fresh lemon juice
1/4 cup fresh dill (mostly minced, but leave a few sprigs for garnish)
1 tsp ground pepper
1 tsp sea salt
Steps
Salmon
Preheat oven to 215°C
Place salmon on a baking sheet lined with aluminum foil.
Season the salmon with a tbsp of lemon juice, a pinch of sea salt, and a pinch of ground pepper
Roast Norwegian salmon until cooked through in the middle.
Dill sauce
In a small bowl, whisk together the yogurt, 2 tbsp of lemon juice, minced dill, and garlic.
Drizzle over the salmon and garnish with remaining dill sprigs.
Poor Man’s Cookies (Fattigmann Cookies)

Ingredients
1 egg
3 egg yolks
¼ cup heavy cream
4 teaspoons white sugar
1 tablespoon butter, melted
¼ teaspoon ground cardamom
1 ½ cups all-purpose flour
4 cups lard for frying
Steps
In a large bowl, beat egg and yolks together. Stir in the cream, sugar, melted butter and cardamom. Mix in enough of the flour to make a soft but manageable dough. Handle the dough as little as possible or cookies will be tough.
Heat oil in a deep skillet to 190 degrees C. On a floured cloth, roll the dough out to 1/8 inch thickness. Cut into 2x2 inch diamond shapes.
Fry in hot lard until lightly browned. Drain on paper and dust with confectioners' sugar when cool. The cookies should be uniform in size and thickness.
Krumkake

Ingredients
½ cup unsalted butter
1 cup white sugar
2 eggs
1 cup milk
1 ½ cups all purpose flour
½ teaspoon vanilla extract
½ teaspoon butter flavoring
Steps
Heat krumkake iron on the stove over medium heat. You can also use an electric krumkake or pizzelle iron.
Cream together the butter and sugar in a bowl. Add the eggs, one at a time, and mix well using a spoon. Pour in the milk, flour, vanilla, and butter flavoring; mix well.
Place a teaspoon of the batter on the preheated iron, and press together. Cook until browned, about 30 seconds per side, depending on the heat. Remove from the iron and quickly roll up around a stick or around a cone before they harden.
Kransekake

Ingredients
500g ground almonds
500g icing sugar
4 free-range egg whites, lightly whisked
1 tsp almond extract
vegetable oil, for greasing
semolina, for dusting
plain flour, for dusting
3 free-range egg whites
600g icing sugar
few drops of food colouring
Steps

Place the ground almonds and icing sugar in a large electric mixer. Add the egg whites and almond extract and mix with a dough hook. This could be done by hand but is easier with a mixer due to the large quantities. Cover the bowl with film and chill in the fridge for a minimum of two hours (preferably overnight).
Preheat the oven to 200C.
Lightly brush the insides of the kransekake moulds with vegetable oil. Sprinkle a little semolina into each mould and tip the moulds to distribute the semolina evenly around the inside, shaking out any excess.
Divide the chilled dough into six equal-sized pieces.
Divide one of the pieces of dough into three different-sized pieces: one small, one medium and one large. Dust a work surface lightly with flour and roll each piece out into finger-width lengths that are long enough to wrap round the kransekake moulds.
Fit the longest piece of dough inside the largest kransekake ring, pressing the ends together to seal. Do the same with the medium-sized and smallest pieces of dough. Repeat this process with the remaining five pieces of dough.
Bake it in the oven for 8-10 minutes, or until golden-brown, then remove from the oven and set aside to cool in their moulds until hardened. Transfer to a wire rack to cool completely.
Meanwhile, for the icing, whisk the egg whites in a large bowl until frothy. Gradually whisk in the icing sugar a spoonful at a time, until you see peaks.
Spoon half of the icing into a separate bowl and add the red food colouring. Whisk, then spoon the icing into a piping bag fitted with a small plain writing nozzle. Spoon the white icing into a separate piping bag fitted with a small plain writing nozzle.
To assemble, sort the cooked rings into size order.
Pipe a few dots of white icing onto the base of the largest ring and stick it to a large serving plate.
Pipe zig-zag patterns onto the largest ring using first the white, then the red icing, overlapping the two.
Repeat the process with every ring and assemble from largest to smallest, and allow the icing to set.
Sveler

Ingredients
4 eggs
6 tablespoons sugar
500 g wheat flour
1 tablespoon baking soda
½ tsp salt
1 l kefir
2 tablespoons melted butter
Steps
Whisk eggs and sugar well.
Mix flour, baking soda and horn salt and add alternately with kefir.
Finally add the melted butter.
Fry swells on a rack or in a frying pan.
Butter cooled swell with butter and sprinkle with sugar.
Divide each swell in half, fold over and serve. The swells can also be served with jam and sour cream.
