Madagascan Recipes To Try This Week!

Koba Ravina
Ingredients
5 bananas
1½ cup glutinous rice flour
½ cup brown sugar
1 vanilla bean
½ cup peanuts
Banana leaves
Raffia
Steps
Mash bananas. Mix with rice flour and sugar.
Cut the vanilla bean in two, lengthwise. Split the pod in two and scrape the inside of each half pod with the blade of a knife to remove the seeds.
Add collected vanilla and mix.
Place 3 tablespoons of the batter in the center of a banana leaf.
Sprinkle with peanuts
Fold the banana leaf along the length of a rectangle and tie with raffia.
Steam for 20 minutes.

Mosakiky

Ingredients (dozen skewers)
500g zebu meat, diced
2 tablespoons of soy sauce
5 tablespoons of oil
2 tablespoons of papaya juice to tenderize the meat salt, pepper, as well as a few crushed garlic cloves.
Steps
Combine everything in a bowl and stir generously before marinating for a minimum of 12 hours.
The next day, prick the meat on the picks and grill them for 4 to 5 minutes on each side.
Akoho Sy Voanio
Ingredients (2 Servings)
250g chicken breast
1 large onion
1 garlic clove
5 tomatoes
A little piece of ginger
1 can coconut milk
Pepper and salt
A dash of saffron
A dash of sugar
A little oil
A cup of rice
Steps
Peel and finely chop the ginger, onion and garlic.
Cut the back of the tomatoes and boil them in water for 30 seconds.
Then put the tomatoes in cold water to peel the skin off.
Lightly fry tomatoes, onions, ginger and garlic in a pan.
Add the coconut milk and let it simmer in low heat for 30 minutes
Cut the chicken breast in small pieces, season with pepper and salt and saute the chicken briefly in a pan with a little oil.
Meanwhile, prepare a pot with rice and water covering the rice completely. Slowly hit up until the rice slightly simmers, then wait until the desired consistency has been achieved.
Add the chicken to the tomato-coconut mixture and let it simmer for another 15 minutes.
Season with a dash of saffron and a dash of sugar.

Lasopy

Ingredients (8 servings)
3lbs veal bones
2 quarts water
2 tablespoons salt
3 carrots, peeled and cut into 3 pieces
1 turnip, peeled and cut in chunks
8 scallions, but in large pieces
1 cup string bean
1 cup tomatoes, cut in quarters
½ teaspoon black pepper
Steps
In a 4 quart pot, simmer bones, water and salt.
Add carrots, turnip, scallions, string beans, tomatoes and pepper and simmer for 1 hour or until veggies are tender.
Remove bones.
Put the veggies through a sieve or veggie mill to make a puree.
Lasary Voatabia
Ingredients
2 medium tomatoes seeded and chopped (about 1 1/2 cups)
1bunch green onions chopped
juice of half a lime
generous pinch of salt
1/4 tsp grated fresh ginger
couple shakes cayenne sauce like tabasco
black pepper to taste
chopped parsley or cilantro for garnish optional
Steps
Combine all the ingredients in a bowl.
Cover and place in the fridge for an hour or so.

Mofo Gasy

Ingredients (18 servings)
½ cup All-purpose flour
¼ cup + 2 tablespoons Cream of Rice or Rice rawa
½ teaspoon Instant Yeast
2 tablespoons Sugar, divided use
¾ cup Lukewarm Water
½ teaspoon Vanilla extract
Steps
In a medium-size mixing bowl, combine flour, cream of rice, yeast, sugar and water. Mix well, cover the bowl and set aside to rise for 4~8 hours.
The batter should be frothy and have a slightly sour smell once ready.
If the batter is too thick, then add a few tablespoons of water to thin it out. Add vanilla extract and mix well.
Heat a pan on medium heat. Add oil to each cavity and pour about 1 tablespoon of batter into each as well.
Cook for 1~2 minutes or until the bottoms get golden brown. Using a fork or a wooden skewer, flip them over and cook on the other side for another 1~2 minutes. You want the pancakes to be golden outside and completely cooked through inside.
Remove the cooked mofo gasy onto a plate and keep them warm. Repeat with the remaining batter.
