Irish Recipes to Try This Week!

Soda Bread


Ingredients

  • 4 cups all-purpose flour

  • 4 tablespoons white sugar

  • 1 teaspoon baking soda

  • 1 tablespoon baking powder

  • ½ teaspoon salt

  • ½ cup margarine, softened

  • 1 cup buttermilk

  • 1 egg

  • ¼ cup butter, melted

  • ¼ cup buttermilk


Steps

  1. Preheat the oven to 190 degrees C. Lightly grease a large baking sheet.

  2. In a large bowl, mix together flour, sugar, baking soda, baking powder, salt and margarine. Stir in 1 cup of buttermilk and egg. Turn dough out onto a lightly floured surface and knead slightly. Form dough into a round and place on a prepared baking sheet. In a small bowl, combine melted butter with 1/4 cup buttermilk; brush loaf with this mixture. Use a sharp knife to cut an 'X' into the top of the loaf.

  3. Bake in a preheated oven until a toothpick inserted into the center of the loaf comes out clean, 45 to 50 minutes. Check for doneness after 30 minutes. You may continue to brush the loaf with the butter mixture while it bakes.



Irish Bread


Ingredients

  • 3 cups all-purpose flour

  • 1 cup sugar

  • 3 teaspoons baking powder

  • 1/4 teaspoon salt

  • 1 large egg

  • 2 cups milk

  • ½ cup butter, melted

  • 1 ½ cups raisins

  • 2 tablespoons caraway seeds (optional)


Steps

  1. Preheat the oven to 350°. In a large bowl, whisk flour, sugar, baking powder and salt. In a small bowl, whisk egg, milk and butter. Stir into dry ingredients just until moistened. Fold in raisins and, if desired, caraway seeds.

  2. Transfer to a greased square baking pan. Bake until a toothpick inserted in the center comes out clean, 40-45 minutes. Remove from pan onto a wire rack. Serve warm.



Smoked Salmon Cheese Spread


Ingredients

  • 2 packages cream cheese, softened

  • 1 package smoked salmon

  • 3 tablespoons horseradish sauce

  • 1 tablespoon lemon juice

  • 1 tablespoon Worcestershire sauce

  • ¼ teaspoon Creole seasoning

  • ¼ teaspoon ground pepper

  • Chopped walnuts and snipped fresh dill

  • Assorted crackers


Steps

  1. Place the first seven ingredients in a food processor; process until blended. Transfer to a serving dish; sprinkle with walnuts and dill. Refrigerate, covered, until serving. Serve with crackers.



Date Pecan Tea Bread


Ingredients

  • 227g chopped dates

  • 57g softened butter

  • 1 teaspoon baking soda

  • ¾ teaspoon salt

  • 142g to 159g brown sugar

  • 1 cup hot brewed coffee

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 1 tablespoon vodka or brandy (optional)

  • ½ teaspoon baking powder

  • 206g King Arthur Unbleached All-Purpose Flour

  • 113g coarsely chopped walnuts


Steps

  1. Preheat the oven to 180°C. Lightly grease a loaf pan.

  2. Place the dates, butter, baking soda, salt, and brown sugar in a mixing bowl.

  3. Pour the hot coffee into the bowl, stirring to combine. Allow the mixture to cool for 15 minutes.

  4. Add the egg, vanilla, liquor, baking powder, and flour, beating gently until smooth. Stir in the walnuts.

  5. Pour the batter into the pan, gently tapping the pan on the counter to settle the batter.

  6. Bake the bread for 45 to 55 minutes, tenting the loaf gently with foil after 30 minutes, to prevent over-browning.

  7. After 10 minutes, gently turn the bread out of the pan onto a rack to cool. Cool completely before slicing. Wrap airtight, and store at room temperature for several days; freeze for longer storage.



Corned Beef


Ingredients

  • 1 corned beef brisket with spice packet

  • 1 cup brown sugar

  • 4 cans or bottles Irish stout beer

  • 1 quart beef stock

  • 1 onion, peeled

  • 2 cloves garlic, peeled

  • 2 bay leaves

  • 12 whole black peppercorns

  • 2 pounds red potatoes, quartered

  • 1 package carrots, cut into sticks

  • 1 head cabbage, cut into wedges


Steps

  1. Rinse brisket thoroughly in cool water and place into a large Dutch oven. Generously coat beef with brown sugar on all sides. Pour Irish stout beer around roast, followed by beef stock. Liquid should cover the brisket by about 1 inch; add another beer if more liquid is needed.

  2. Place onion, garlic, bay leaves, spike packet from corned beef, and peppercorns into liquid. Bring to a boil, reduce heat to low, and cover Dutch oven. Simmer for 2 ½ hours, turning brisket over in the beer mixture every 30 minutes. Place potatoes and carrots around roast, cover, and simmer for 20 minutes. Add cabbage wedges and simmer until tender, about 10 more minutes. Brisket should easily pull apart with your fingers or a fork.

  3. Transfer vegetables to a serving bowl and place corned beef on a serving platter; let meat rest 10 minutes before slicing across the grain to serve.




Boxty


Ingredients

  • 1 ½ cups grated raw potatoes

  • 1 cup all-purpose flour

  • 1 cup leftover mashed potatoes

  • 1 egg

  • 1 tablespoon skim milk

  • salt and pepper to taste

  • ¼ cup olive oil


Steps

  1. Toss the grated potatoes with flour in a large bowl. Stir in mashed potatoes until combined. In a separate bowl, whisk together the egg and skim milk; mix into the potatoes. Season to taste with salt and pepper.

  2. Heat the olive oil in a large pan over medium-high heat. Drop in the potato mixture, forming patties. Fry on both sides until golden brown, 3 to 4 minutes per side. Drain on a paper towel-lined plate. Serve warm.



Guinness Chocolate Cake


Ingredients


Cake Pan:

  • 2 tbsp butter

  • 2 tbsp unsweetened cocoa powder

Guinness Chocolate Cake:

  • 12 tbsp unsalted butter

  • 230 g Guinness

  • 64.5 g unsweetened cocoa powder

  • 2 large eggs

  • 200 g Greek yogurt full fat

  • 1 tablespoon vanilla

  • 250 g all-purpose flour

  • 200 g sugar

  • 220 g brown sugar packed

  • 1 tablespoon baking powder

  • ½ teaspoon sea salt

Frosting:

  • 230 g cream cheese softened

  • 300 g powdered sugar

  • 2 tablespoons heavy cream


Steps


Cake Pan:

  1. Butter a springform pan with 2 tablespoons of unsalted butter. Dust with 2 tablespoons of cocoa powder, tap out the excess cocoa powder and set off to the side.

Guinness Chocolate Cake:

  1. Preheat your oven to 350°

  2. Melt the butter in a saucepan over medium-low heat. Add the Guinness to the melted butter and bring to a simmer.

  3. Remove the pan from the heat and stir in the cocoa powder. Mix well and allow to cool for 10 minutes.

  4. Whisk together the Greek yogurt, eggs and vanilla extract in a large mixing bowl.

  5. Add the cooled cocoa mixture to the egg mixture and mix until well blended and smooth.

  6. In a large mixing bowl, combine the flour, sugars, baking powder and salt. Set to the side until needed.

  7. Add the flour to the chocolate mixture and stir until well incorporated.

  8. Pour the chocolate batter into the prepared pan.

  9. Bake on the middle rack of the preheated oven for 50 to 55 minutes or until a cake tester comes out clean.

  10. Cool the finished cake on a wire rack until cool to the touch. Transfer the cooled cake to a cake dish for frosting.

Frosting:

  1. In the bowl of your stand mixer use the paddle attachment to beat the cream cheese until smooth.

  2. Gradually add in the powdered sugar and the cream (add more if needed).

  3. When the frosting is smooth and the cake has cooled, frost the top.
