Puerto Rican Recipes to Try This Week!

Arroz con habichuelas (8 servings)


Preparation time: 5 minutes

Cooking time: 25 minutes


Ingredients

  • 4 cups of rice

  • 1 can of habichuelas

  • ½ cup of ham (cut in squares)

  • 1 spoon of minced garlic

  • 3 packets of seasoned with coriander and achiote

  • 1 packet of ham flavoring

  • 3 spoons of sofrito

  • ½ spoons of cumin

  • Oil


Steps

  1. Firstly, in a hot pan with oil put the ham in, then (approximately 2 minutes) you need to add the sofrito, the garlic, and all of the packets, the cumin, and 4 cups of water.

  2. After the water starts to boil, add the rice and mix all the ingredients, then let it cook on medium heat.

  3. When the rice is softer we mix it again and let it cook on low heat for 5 minutes.

  4. Then we mix it until the rice is almost dry and let it cook for 2 more minutes.

  5. Finally, you can serve it and you can add chicken or steak to make it even better.



Mofongo

Preparation time: 10 minutes

Cooking time: 15 minutes


Ingredients

  • 4 green plantains

  • 1lb of chicharrón (crunchy pork skin)

  • 3 garlic cloves, mashed

  • 4 teaspoons of olive oil

  • 2 cups frying oil


Steps

  1. Peel the plantains, cut them into 1 1/2-inch slices, soak them in salty water for 15 minutes, drain them and dry them before putting them on the hot skillet with oil.

  2. Fry them for about 12 minutes at medium-low heat or until they turn light brown. Make sure to turn them. Do not brown them too much, so they are easy to mash. Stick a fork in them to check if they are done.

  3. Remove them and mash them on a mortar. Add some mashed garlic and pieces of chicharrón.

  4. Once you have mashed all the plantains, mold them into the shape of a half-sphere using your hands or a container. Serve hot with chicken broth or your favorite meat.



Tostones

Total time: 40 minutes


Ingredients

  • 3 large very green plantains

  • 3 teaspoons crushed fresh garlic

  • 4 teaspoons salt

  • 4 cups water

  • ½ cup olive oil or ½ cup canola oil


Steps

  1. Peel plantains and slice them into 1 inch thick sections.

  2. Place water, salt, and garlic in a large baking pan.

  3. Soak the plantain slices in the garlic mixture for 20 minutes.

  4. Pour oil in a pan set at 180 degrees.

  5. Fry plantains until they are golden brown on all sides.

  6. Flatten each plantain between sheets of wax paper with a plate or the palm of your hand.

  7. Dip flattened plantains into garlic mixture and place on a paper towel.

  8. Place plantains into the oil once again and fry until crispy and golden brown.

  9. Sprinkle it with salt to taste.

  10. Serve promptly after frying for best taste.



Arañitas (12 servings)

Preparation time: 10 minutes

Cooking time: 15 minutes


Ingredients

  • 3-4 green plantain

  • Salt and garlic to liking

  • Oil for frying


Steps

  1. Peel the plantain and grate them. You should have strips.

  2. Then add the salt and garlic.

  3. Heat the oil until it has a high temperature. Then take approximately 1 or 2 spoons of the grated mixture and crush it using the palms of your hands.

  4. Fry them on both sides until golden brown, then put them on paper to absorb the excess oil.
